Jambalaya (On The Bayou) was possibly performed by Old & In The Way in 1973. The song was performed by Jerry Garcia, Phil Lesh and Bill Kreutzmann with Doug Sahm, Leon Russell and others at a show in November 1972.

Jerry Garcia played Jambalaya whilst sitting in with the Nitty Gritty Dirt Band on April 28, 1974.

The song was first recorded by Hank Williams in the Summer of 1952 and released on a single a month later. The song stayed at #1 in the C & W charts for 14 weeks.

The role of Moon Mullican in the writing of the song is uncertain. It is possible that he contributed to the composition but was not officially credited for contractual reasons. The melody of the song is based on the Cajun song Grand Texas.
