The song is credited to Fleecie Moore and Bill Tennyson, Fleecie Moore was, at that time, Louis Jordan's wife and he assigned publishing rights for some songs to her to circumvent existing publishing agreements. The song was presumably written by Jordan and Bill Tennyson. On some recordings the writing credits are just Bill Tennyson.

There is no place in West Virginia called Salt Pork but there is a long, and possibly true, story behind the genesis of the song which falls outside the scope of this page.
